Our certified organic Yacón Syrup boasts a rich, caramel taste and is about half as sweet as honey. It adds instant flavor to beverages and to both savory and sweet dishes, and its low glycemic index makes it an ideal option for those conscious of their sugar intake.

Yacón (Smallanthus sonchifolius) is a large daisy native to the Andean regions of South America. The syrup is made from the root of the plant and scores best in the Glycemic Index for sweeteners that are sugar-based because it derives its sweetness from fructooligosaccharides (FOS). Fructooligosaccharides are short-chain sugars that pass through the body’s digestive tract as soluble fiber, without being absorbed or metabolized. A lower caloric count results from this process. FOS provides only about 1/3 of the calories as sugar (sucrose). The undigested portion of the FOS serves as a prebiotic providing nutrition for “good” bacteria found in the gut such as Bifidobacterium and Lactobacillus.

There are so many delicious uses for Yacón Syrup:

  • Drizzle over any entrée or side dish to add just the right touch of sweetness
  • Mix with Greek yogurt and berries
  • As a dip for apple slices
  • Drizzle atop pancakes, waffles, toast or ice cream
  • Blend into a smoothie
  • As a substitute for honey or agave in no-bake recipes

NOTE: Think of Yacón Syrup like a condiment, the way you might use maple syrup or honey. Heating Yacón Syrup to high temperatures does remove some of its beneficial qualities but will not affect its taste. You can bake with it if you’re simply looking to sweeten your dish without adding carbohydrates and spiking your blood sugar; however, in order to receive all of the nutritional benefits that Yacón Syrup has to offer, it is best to incorporate it into no-bake desserts and beverages 158° F (70° C) and lower.
